Mixed vegetable Dal in Milk gravy (Prep: 30 minute)

Hi all,

I experimented today a variant of the daily Dal that we prepare at home. Here it goes....

Ingredients:
-Baby Tomatoes - chopped into halves (can use normal size Tomato too)
-Spring Onions - 2 shoots
-Capsicum - 1/2 medium sized chopped
-Mixed vegetables - Carrots, Cauliflower, Beans (cut long pieces), Corn - chopped into small cubes
-Moong Dal / Tur Dal - 1/2 cup
-Milk - 3/4 cup
-Grated Cheese - 2 tbsp
-Garam Masala - 1 tbsp
-Oil - 1 tbsp
-Almonds - 8 in number - chopped into halves
-Salt and Pepper to taste

Method:
In a pan, add the tbsp of oil and lightly saute the Spring onions, now add the capsicum and tomatoes and the rest of the mixed vegetables and lightly fry them too.
Add the Garam masala and saute the vegetables again.
Now add the Moong dal along with 3 cups of water and 3/4 cup of milk and the 2 tbsp of cheese. (Cheese helps thicken the gravy adding taste to it). Also add the diced Almonds along with Salt and Pepper to taste.

Bring the Milk and vegetable mixture to a boil and allow it to cook for 10 minutes.

Serve the hot Mixed vegetable Dal in Milk gravy along with Chapatis / Rotis.

Tomato, Cheese, Spinach, Capsicum Penne Pasta (Prep : 30 minute)

This is one of my favorite snack /appetizers items!

Ingredients :
- Penne Pasta (1 packet) - Boiled (Save 1/4th cup of the Penne cooked pasta water)
- Tomatoes - 1 chopped fine
- Onion - 1 medium sized - chopped
- Jell peppers / Capsicum - 1 small size chopped
- Spinach leaves - 2 tbsp.
- Pepper Jack / Mozerella Cheese - 1 stick
- Milk - 1/4 cup
- Salt and Pepper to taste


Method of Preparation:
In a pan, saute the onions till the color turns golden brown. Then add and fry the capsicum, the tomatoes and spinach leaves till you cook them well.
Now add the cooked Penne along with the 1/4th cup of the Penne cooked Pasta water.

Now heat the milk along with the cheese and add it to the Pasta mixture.
Cook the entire mixture till the cheese blends with the rest of the mixture.

Once the Pasta is cool, serve with Spinach leaves and grated cheese garnished.
